Edinburgh is famed for it’s Castle, amazing architecture and it’s love of coffee. The city is full of wonderful coffee shops, from the big chains to small independent places. No matter what part of the city you are in, there will be somewhere to stop for a lovely cup of coffee. As a coffee lover, it is really hard to pick just one favourite. Instead, I have a few spots I love in each part of the city. Right now, my hang out spot is in the west end, so here are three of (in my humble opinion) the best coffee shops to visit in the West End.   Hyde & Son  Nestled at the end of George Street, It almost feels like you are walking into another world. From the hustle and bustle of the city, you come into a very peaceful, bright and cosy space. The massive bay windows let in all the light to fill the whole room and feed the most perfect plants which sit amongst the cosiest of seating areas. Hyde & Son has such a different vibe about it, it really doesn’t feel like a coffee shop at all. It almost feels like home. It is an amazing space to hide away from the craziness of the city and cosy up with a book and some of the best coffee in the city. The baristas are so knowledgable and go the extra mile to make sure you enjoy your time there. If I am there, you will find me sprawled across the most amazing bean bags! Oh! and I can’t forget to mention that it turns into a bar at night! So you can spend all day drinking coffee ready to drink all the cocktails at night!   You can find Hyde & Son at 127 George Street and if you are not in Edinburgh, go swoon over their Instagram.     Cairngorm Coffee Co. The gem of the west end, Cairngorm is a bright and chilled spot for spending an afternoon hiding behind your laptop or getting lost in a good book. It is a lovely corner spot which means it gets all the sunshine all day long (when the sun actually comes out!). This is one of my favourite places to get work done, and if you forget your laptop they have some handy iPads along one of the window counters. I am a big fan of getting filter coffee from Cairngorm as they have their techniques nailed and they always rotate the coffee so you always get something different. The team are clearly so passionate about speciality coffee as each cup is so perfectly crafted and had a whole lot of love put into it! I have also heard their cheese toasties are the things of dreams!!   You can find Cairngorm Coffee Co at 1 Melville Place as well a daily fix of coffee on Instagram.   Disposition Coffee Finally, if you are out and about, you have to visit the new kids on the block. Based in the cutest little police box, Disposition is all about great coffee and emotional wellbeing. Self care and mindfulness are things people are becoming increasingly aware of and Disposition mix self love with great coffee. Serving up Williams & Johnson and Obadiah Collective, the baristas work with you in mind. The coffee is just delish and that added care makes the whole experience that bit more special. As well as perfect coffee, they have a great wee selection of treats to go with it. They even have some yummy vegan options too!
